Grapes: 100% Trebbiano

Harvest: by hand in crates late August

Vinification:the grapes are softly pressed and the juice, after one day of decantation ,goes in a steel vat were it stays for the alcoholic fermentation, without the use of added yeast or temperature control.The wine will stay till spring in steel vat ,were also the malolactic fermentation will be made

Refinement: 8/9 months in steel vat and then bottled in spring

Number of bottles produced: 2400 of 0.75l bottles

Alcohol content: 11%

Production area:localita’ Morrocco ( Barberino Tavarnelle )

Altitude: 340 m asl

Vineyard characteristics: planted in 2006 , with spurred cordon training

Soil characteristics: medium mixture, rich in skeleton, small and medium-sized pebbles, sands and boulder

No selected yeasts, enzymes, tannins, animal proteins or products of synthetic origin are used in the production process except for the necessary sulfur dioxide.
The company bases its work on exclusively organic and biodynamic practices.
